Something like: the man‘s; then something like: the cat’s.
Right... I don't have those keys on my board, but I think those are just single quotes, angled differently to emphasize the fact they're enclosing something.

But I dunno. My apostrophes are straight.

Opened up Word, typed up a quick exclamation using single quotes, and yes: those are "smart quotes." That's when the computer angles or flips quotes, to make the enclosed space more obvious.

I'm not sure why (or how) they would get used interchangeably, but technically that is still an apostrophe either way. Also, some different fonts may do some wonky shit to characters, so that may be doing something.

And no, I wouldn't really point that out in critique, but as Leanne says: use them properly!
Only time they're used is in contractions, or possessive cases. "It's/its" I can understand, but in most cases, I can't help but think that a lot of grammar is caused by the educational system teaching rules, and not reasons.
