Is there anyway to change your avatar tag?

i.e "senior member" to something else?

and if there is what would you guys change yours to?

Yes there is -- in your User CP, click on "Edit Profile" -- there's a box in there for "Custom User Title" and that's what you need to change.

In User CP, there's a menu down the left hand side. Under "Your Profile", there's an Edit Profile option. Click on that, it opens up loads of things -- it's where you modify your bio etc. On the right of that page there's a box that's headed "Custom User Title" -- you can enter text in "New Custom User Title". If you still have troubles, let me know and I'll change it for you.
